  • 1 red bell pepper, diced

  • 2 tablespoons nutritional yeast
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and black pepper

Instructions

  • Preheat the oven to 375°F and lightly grease a baking dish with olive oil.
  • Heat a skillet over medium heat and sauté the onion, mushrooms, and bell pepper until tender.
  • Add the crumbled tofu, chickpeas, garlic powder, smoked paprika, nutritional yeast, salt, and black pepper, stirring well to combine.
  • Fold in the spinach and cook for another minute until slightly wilted.
  • Transfer the mixture to the prepared baking dish and spread it evenly.
  • Bake for 30 to 35 minutes until the top is lightly golden.
  • Allow the casserole to cool for a few minutes before slicing and serving.
